Whipped beurre noisette
Imagine this: nutty and salty browned butter, but it’s cold, and soft, light and fluffy. Whipped butter is so damn good, but using browned butter takes it to a whole other level. Now stop imagining it, and make it!
Ingredients
Butter
100g
Smoked salt
2 tsp
Kitchen Stuff
Whisk
Large bowl
Ice cubes
Small mixing bowl
Directions
- Prepare an ice bath in a large bowl. Make sure that your smaller mixing bowl with inside of it. Set aside
- Melt your butter into a pan, and whisk continuously until you can see the brown particles. You now have beurre noisette!
- Immediately transfer to the small mixing bowl and add in the salt. Whisk it all together until incorporated.
- Put the small mixing bowl in the ice bath and whisk continuously. You will see the butter becoming light in colour and having a soft whipped consistency. Make sure the butter doesn’t get too cold and take it out of the ice bath when it’s at your desired colour and consistency.
- If you butter has gotten too hard, don’t worry. Simply melt the butter until soft and slightly runny and try again.
