Sage anchovy fritti
Two sage leaves filled with an anchovy fillet, cover in an airy batter and fried in oil. It’s crispy, it’s salty and super easy to make. Absolutely perfect as a snack or appetizer when you’re hosting an italian dinner party.

Sparkling water

Directions
- Wash your anchovy fillets, make sure that most of the salt is washed out. Pat them dry with kitchen paper.
- Mix the flour with the sparkling water. Set aside for 30 minutes..
- Sort your sage leaves by size and match with the anchovy fillets, slice the fish smaller if necessary. Sandwich the anchovy in between to leaves and press together.
- Heat up oil unto 180 degrees in a frying pan. Make sure that there is at least a 4 cm layer of oil.
- Dip your sage anchovy sandwich in the batter, and carefully place in the hot oil. Fry until golden on both sides. Drain on kitchen paper and sprinkle with sea salt.
- Serve with lemon wedges or aioli. Enjoy!
