Fried pumpkin with brownned butter kefir dip
I am a firm believer of everything is better when fried. So it’s no surprise that even pumpkin gets fried in my house! Covered in a thin and crunchy layer the soft and sweet pumpkin pairs perfectly with the nutty and sour kefir dip.
Ingredients
Pumpkin

Sparkling water
100ml
All-purpose flour

Salt
1 tsp
Black pepper
1 tbp
Dip
Butter
1 tbsp
Kefir
2 tbsp
Creme fraiche
1 tbsp
Smoked salt
1 tsp
Black pepper
1 tsp

Directions
- Mix the dry ingredients until combined in a mixing bowl. Add the sparkling water and whisk until you have a smooth batter. Set aside for 30 minutes.
- Cut your pumpkin into 1cm thick pieces. Turn on your trying pan and heat the oil to 190 C.
- Dip the pumpkin into the batter and fry until golden brown. Make sure work in batches and not to overcrowd the pan.
- Drain the fried pumpkin on kitchen paper and season with salt and pepper.
- In a pan brown some butter. While the butter is browning mix the creme fraiche with the kefir salt and pepper.
- When the butter is browned, set aside and cool down for 10 minutes. After that, add into the kefir mixture and combine.
- Serve the pumpkin and the dip and enjoy!
