Radish and cucumber on garlicky yoghurt

This salad is super easy and great as a lunch, side dish and even a snack. Yoghurt mixed with herbs and garlic, topped with fresh and light vegetables with a sprinkle of heat.

Directions

  • Cut your radishes in to quarters, your cucumbers into chunks and your red onion in thin slices. Wash the onion to get rid of the sharp flavour.

  • Mix the cucumber and radishes with the vinegar. Set aside.

  • In a bowl mix yoghurt with thinly grated garlic, salt, pepper and herbs.

  • Spoon your yoghurt mixture onto a plate and top with the veggies. Sprinkle with some EVOO, mint leaves and red pepper flakes. Enjoy
